

Stephanie of Confessions of a City Eater selected this wonderful cake which appears on the cover of our TWD book. I do not bake large cakes like this very often, but had a special occasion and it was perfect. I was preparing a luncheon for several of my gal pals, one who was recently injured and it was in her honor - also, it was Valentine's Day.
I only had 9" pans. Gosh, the layers were thin, so I baked another two layers. Needless to say, my cake was high, but I loved it and it wasn't really too much trouble. The cake was lovely, moist and so yummy chocolaty. I read the comments on the frosting and am very glad that I did. Yes, it took about 20 minutes for my thermometer to reach 242 degrees and it was a little messy, but what a great frosting. I made it and used it the same day. It was as "light as a cloud" said one of the guests. Everyone enjoyed it and several even had seconds, which is amazing, as we are always watching our diet. However, the rest of the menu was light, so we made up for it with this beautiful cake. I shared the rest and resisted bringing any leftovers home.
I will certainly make this cake again. It was fun!

ReplyDeleteI enjoyed making this cake too. Usually I just make a standard butter cream frosting so the recipe really challanged me to try something different and I really liked the results. (Will I make it again, though? Maybe. I'd definitely make the cake part, but the icing was a bit of a challange!)
