TWD Coconut Tea Cake

Thank you Carmen of Carmen Cooks for your selection. I served this Coconut Tea Cake after an Indian luncheon with some of my Canadian friends. In the spirit of the menu, I added cardamom to the cake per "Playing Around". I toasted whole cardamom pods just lightly until you can smell the scent and then ground them. All of the ladies really enjoyed this simple and delicious cake. Oh and also, my honey loved it toasted for a little breakfast treat. Have a good week TWD bakers. lola
