
I live in "mango" country, so I was excited when Kelly of "Baking with the Boys" selected this recipe. I used the ginger and cinnamon as specified, as ginger is a favorite spice of mine. I left out the golden raisins, not a favorite, but added some chopped slivered almonds. I used what is called in my market, a Paradaiso mango. There is a fun book called The Great Mango Book by Allen Susser. This particular named mango was not in the book, but I think it is similar to the Kent or Manzanillo. I emailed Allen Susser to ask about the name as known here in my part of Mexico. I haven't heard from him as yet. It is a large mango with lots of flesh, so I used only one. I baked 3 smaller loafs, 5 1/2 x 3 1/4. I found it to be a delicious bread, very giftable and easy to make. One baker mentioned using cardamom in the Q&A. I think that would be great. This recipe is a keeper for me.

ReplyDeleteI also really enjoyed this recipe. Next time I might lower the amount of cinnamon slightly and up the amount of lime zest. I also think it would be really great with some macadamia nuts.
