Coconut-Roasted Pineapple Dacquoise


This recipe was chosen for TWD by Andrea of Andrea In The Kitchen. I had several issues with this recipe, as did other bakers. First, I do not care for white chocolate and cannot get it where I live. During Q&A, a good suggestion was presented to use yogurt or sour cream. I make my own yogurt and strain it so that it is thick as in "Greek style". That was the perfect solution for me. However, the humidity here was not so easily addressed. I thought, oh heck, I will give it a try. Well, even though I beat the whites as directed, my meringue spread. I used fresh coconut and perhaps it was too moist. After baking, turning off the oven, then leaving them in the oven all night, they were fairly crisp and tasty. I cut the pieces into rectangles and assembled the Dacquoise. I had lightly grilled the pineapple which was delicious. All in all, it was acceptable. Not using white chocolate made it a lighter dessert, which we like. Thank you Andrea for the challenge and a recipe that I will try again when the weather is more cooperative.   6. I loved the dacquoise. But then, I love pineapple and love meringue. I also left out the white chocolate and just subbed in whipped cream.
