
I have been feeling rather under the weather this past week, so the selection by Natalie of Oven Love was an easy treat to bake. I made applesauce with unpeeled apples, a couple of pears and lemon zest. This quick bread uses applesauce to replace most of the oil or butter. Spices are added, along with chopped dried fruit and oatmeal. I used chopped apricots which I had soaked to soften. The topping is chopped nuts with brown sugar and cinnamon. Instead of a larger loaf pan, I used two 7 1/2 x 3 1/2 loaf pans. The perfect size to gift. After a bit of cooling, I couldn't wait to taste. Delicious! Thank you Natalie.
Next week is a Crunch Peach Tart. I wish that I were in the Texas or Colorado where my kids live. I just cannot get good fresh peaches here in this area of Mexico. Who knows, a farmer may turn up on the street during the week and surprise me. So it may be mangoes again for me. See you then TWD bakers. Have a good week! lola
