
The selection this week is Genoise Tres Cafe (I am now not scared when a genoise is part of the recipe, thanks to Rose and her excellent instructions). The cake is soaked in a coffee syrup. I used Medaglia D'Oro instant espresso powder for the soaking and for the Mocha Whipped Ganache. I had thought it might too strong, but it was delicious and I like rich roasted coffee. The genoise easily absorbed all of the syrup. The whipped ganache is light as a feather. This cake may not look too impressive, but it certainly is delicious. I prepared this a couple of weeks ago for a dinner party and am looking forward to making it again.
I have just returned from a car trip to Guanajuato and San Miguel Allende in central Mexico. My honey and I take Canadian friends each year to a different area of Mexico. Our friend is a photographer and we all love to share the local charm and delicious food, plus they are happy to escape the Toronto cold. If anyone would like some information on absolutely perfect B&Bs and restaurants in that area, please let me know.
