HCB - Rose's Whipped Cream Cake - Free Choice

Free choice again this week. I wanted an easy recipe as I did other baking over the weekend. This cake contains no butter or oil. However, the whipped cream with its butterfat replaces the butter. After whipping the cream to stiff peaks, eggs and vanilla which are lightly combined are added along with superfine sugar. Then the flour mixture containing baking powder and salt is folded into the whipped cream/egg mixture. Easy as can be. It is baked in a bundt pan and when unmolded produces a lovely cake. I think the color is especially nice. It is a simple, nicely textured and uncomplicated cake to enjoy with fruit or alone with just a cup of tea.
