
Carrots, zucchini, banana, oatmeal, toasted walnuts and the usual ingredients combine to make a cake that is perfect with your second cup of coffee in the morning. I really have to laugh because after the shredding, chopping, mashing, toasting and sifting this is a "quick" bread. I baked it in 3 loaf pans, 3 1/4 x 5 3/4. I have had these pans for years and they are a favorite size. This is a pretty loaf with the carrot, zucchini and walnuts peeking through. I gifted these little loafs to happy friends. ReplyDeleteFunny, how we both made 3 mini loaves. This bread was a big hit in my house. Looks like your loaf turned out almost as light in color as mine. Most other loaves turned out darker. We're trying to figure out why.
ReplyDeleteI have to agree with Shandy.. Rose's concept is not the same with us :)... but this was quick compare to the last 3 choices we had in the club.
