Daring Cooks Challenge - Souffle


For the November Daring Cooks' Challenge, Dave and Linda of Monkeyshines in the Kitchen presented this classic French dish. Their directions, suggestions and photos are excellent. I haven't made a souffle in ages. I pulled out my Julia Child "The French Chef Cookbook" which is based on her TV series first filmed in Boston in the early 1960's. I was a new bride living in Connecticut at the time and watched this wondrous cooking show faithfully. Of course, you had to be home, because it was not possible to record it. If you wanted the recipe, you sent a SASE to the TV station and they would mail you the recipe. I still have those recipes in my files. Okay, I am not the young bride, but I am still cooking and sharing with family and friends.
For this challenge, I made a gruyere cheese and spinach souffle with parmesan cheese sprinkled on the sides and bottom of the dish. This recipe calls for baking in a water bath. Julia calls it "The Noncollapsible Cheese Souffle". Although the rise was not spectacular (which is often less with savory than sweet souffles), I enjoyed preparing this quintessential French dish.
